Issues with updating to Magento ver. 1.4.2.0-rc2

We updated over the weekend and as of this morning there are surprisingly few issues. Visitors have been able to place orders, etc. However one nagging issue I cannot figure out is why the products are being displayed like this:

I have attempted to change the layout in the backend and the layout won’t change.

Any ideas?
